Level 2 Certificate in General Pâtisserie

Create exquisitely decorated and delicious goods in our industry standard kitchens, such as focaccia, choux pastry, panna cotta, crème caramels, cookies, Madeira cake and much more!

Whether your ambition is to work as part of a creative team or be your own boss, you will develop all of the practical skills and knowledge required to bring you one step closer to an exciting career in the industry.

When will I start the course and how long will it take?

The course will start in September and will take one year to complete.

What will I study?

You will cover the following:

  • Fermented goods - Breads, Danish pastries, doughnuts, bread rolls, fruit loaves and focaccia.
  • Pastries - Short, sweet, choux, suet and puff pastry.
  • Hot and cold desserts - Summer puddings, trifles, crème caramels, pana cotta, bavarois, posset, sponge puddings and cakes.
  • Biscuits, cakes and sponge products - Victoria sponge, Madeira cake, cookies, scones, shortbread, brownies, Genoese, cupcakes and much more.

How is it assessed?

You will be assessed through a series of practical assessments.

Do I need any previous qualifications to start this course?

You do not need any formal qualifications, just passion and a commitment to your studies.

Achieving a good standard of English and maths is a key requirement for many jobs, as well as for courses you may wish to progress on to. If you achieve below a grade 4 in your English and/or maths GCSEs at school, you will study it alongside your chosen course when you join us.

What are the course fees?

f you are a school leaver, aged 16-18, (under the age of 19 on or before 31st August 2019), you do not pay tuition fees or examination and registration fees and may be eligible for additional support depending on your financial situation. What can I go on to do once I have completed this course?

Once you have successfully completed this course, you have the opportunity to advance your skills and knowledge, by progressing on to:
