Guest Chefff 3St Helens College recently welcomed world-renowned Chefs, Aazam Ahmad and James Holden, to innovative, award-winning restaurant, Colours, to provide an invaluable opportunity for catering students to enhance their skills and experience. The VIP dining experience was a ticket only affair and sold out within hours.

Aazam Ahmad was born and bred in Manchester. Aazam’s food is influenced by his travels to Eastern Asia, the result of which includes one of his signature dishes, Swordfish with Mango and Paw Paw. His originality and ability to combine elements of different culinary traditions contributed to him being named BBC Fusion Chef of the Year. Aazam has raised over £100,000 for charity taking part in auctions, offering his time and skills, to raise money for Cancer Research and Manchester’s Christies Hospital.

Guest chefff1James Holden trained in the Northwest before heading to London to work at the world-famous Savoy Hotel. James has worked under several leading chefs including Silvano Trompetto and Anton Edelmann and has also gained experience working in Michelin starred kitchens both at home and abroad. Since 2007, James has been an active Chef in the Northwest delivering the ‘Chefs Adopt a School’ food education programme to over 800 schools.

Aazam and James created a menu that fused traditional British cooking with Far Eastern styles. Students had the opportunity to watch expert tutorials from James on how to debone and stuff a chicken leg, as well as learning how to create Asian dumplings from Aazam.

Ian Corhkill, Catering Tutor at St Helens College, said, "Special events such as this guest chef dinner provide a great opportunity for current students to further their skills. We want our students to gain as much industry experience as possible, with evenings such as this providing a fantastic opportunity for skills development. Aazam and James have been great with the students, teaching them new culinary skills, whilst providing insight into life in a busy kitchen."

St Helens College's catering courses help to develop the skills, knowledge, and understanding needed to pursue a career in the catering and hospitality sector. Students are taught by catering professionals and benefit from the use of excellent, industry-standard facilities.
