Larder Preparation

This course will allow you to understand and learn basic larder skills, such as breaking down a whole chicken, preparing fish and making Chicken Kiev’s and pates.

The course will provide a strong foundation to build your culinary flair and provide tips to ensure making food is a fun and enjoyable past time.

This course is due to start on Thursday 6th February 2025. You will attend college on Thursday evening from 6.00pm – 9.00pm, for four weeks.

This course will take place at our Town Centre Campus, Water Street, St Helens, WA10 1PP.

This course will allow you to explore various ingredients and develop basic craft skills.

The programme will encourage you to develop creative culinary ideas and show you the art of presenting food to impress.

Not only will the programme provide you with some new skills in culinary techniques but will also provide you with a small collection of recipes that you are bound to enjoy.

There is no formal assessment. You will be given feedback based on your progress with suggestions and guidance for areas for improvement.

As with all our leisure courses, the main emphasis is to come and enjoy!

There are no formal entry requirements. The course is suitable for all levels of ability.

You will need to wear strong, flat sensible shoes and bring along an apron, tea towel, and an oven glove.

Please bring along a container to take what you have made home with you.

You may be eligible for funding if you have not recently participated in a similar programme, or received any other recent government funded training.

There are a number of fee options for this course including:

  • If you are unemployed – FREE
  • If you are employed – £30
  • If you are not eligible for funding – £120

The course price is inclusive of all the ingredients that you will need for each session.

You may wish to progress onto an accredited qualification in this subject, which will allow you to practice your skills in the industry.
