Cakes for Afternoon Tea


This course is suitable for students aged 19 and over.

Afternoon tea is a tea-related ritual that was introduced in Britain in the early 1840's. It evolved as a mini meal to stem the hunger prior to an evening meal. Nowadays, Afternoon tea is widely seen as a social or celebration event for many occasions.

This course will allow you to develop skills in preparing your own afternoon tea to entertain your friends and family.

When will I start the course and how long will it take?

This course is due to start on Thursday 13th January 2022. You will attend college on Thursday evening from 6.00pm - 9.00pm, for four weeks.

The course takes place at St Helens College, Town Centre Campus, St Helens, WA10 1PP.

What will I study?

The course will allow you to explore the various basic ingredients and develop the essential craft skills in preparing afternoon tea.

Some of the cakes you will make are:

  • Earl Grey tea cupcakes with clotted cream
  • Glazed fresh fruit tarts
  • Mini lavender iced biscuits
  • Lemon and basil drizzle cake

Course participants will be able to develop their awareness of Health and Safety relating to the preparation of food and food safety awareness, whilst learning logical and coherent methods for producing delicious cakes.

How is it assessed?

There is no formal assessment. You will be given feedback based on your progress with suggestions and guidance for areas for improvement. As with all our leisure courses the main emphasis is to come and enjoy.

Do I need any previous qualifications to start this course?

There are no formal entry requirements and the course is suitable for all levels of ability.

You will need to wear strong, flat sensible shoes and bring along an apron, a potato peeler, tea towel, and an oven glove. Please bring along a container to take what you have made home with you.

What are the course fees?

You may be eligible for Community Learning funding if you have not recently participated in a similar Community Learning programme, or received any other recent government funded training.

There are a number of fee options for this course including:

  • If you are unemployed - FREE
  • If you are employed - £30
  • If you are not eligible for Community Learning - £120

The course price is inclusive of all wines that you will taste at each session.

What can I go on to do once I have completed this course?

You may wish to progress on to our other Colours Cookery School courses or alternatively you may wish to pursue an accredited qualification in this subject which will allow you to practice your skills in the trade.
