This one-year course will enhance your knowledge of preparing, cooking and finishing complex dishes, from fish andmeat to shellfish and game, whilst adhering to food safety, health and hygiene at all times. You will also learn new techniques and skills in butchery, larder preparations, sauce work, and the production of fine pastries and confectionery. What will I need? You should have successfully completed the level 2 Diploma in Professional Cookery. Progression You could progress directly into employment in this exciting industry. CATERING Level 2Diploma Professional Cookery What will I study? Throughout this one-year course, you will become proficient at menu planning, an essential skill for any future Head Chef, and develop your experience of cooking delicious soups, stocks and sauces, before moving on to fruit, vegetables, meat and fish. You will even have the opportunity tomaster the art of hot and cold puddings as well as biscuits, cakes and sponge. What will I need? You should have four GCSEs at grade 4 or above, including English or maths. Progression You could progress on to the level 3NVQDiploma in Professional Cookery.
