LOB WEBEarlier this week, our Level 3 Advanced Diploma in Professional Cookery students undertook one of their practical assessments, of cooking stuffed and poached paupiette of fish, in just 90 minutes.

The assessment focused on the skills the students had gained over the past 4 weeks in; skinning and filleting fish, as well as the production of fish stock, the reduction of sauce and garnish and the final presentation of the dish. In addition to the assessment,there was also a demonstration of how to correctly prepare and cook lobster, which was also used in their final dishes.

A huge well done to all students for creating some seriously impressive dishes that had our mouths watering!
