Last week, in preparation for their upcoming exam, our Level 3 Advanced Cookery students got the chance to test their skills working with fresh brown crab.
Students gained knowledge on the sustainability of shellfish stocks, the different purchasing methods for fresh crab as well as cooking and finishing methods.
The past few week's intensive practicals have helped prepare students for their imminent 5-hour final exam. The practice looks like it's paying off as all the dishes look incredible. Well done everyone!
