Our Level 3 Advanced Diploma in Professional Cookery students embarked on a gastronomic journey as they learned the science behind why certain flavours work together.

The students sampled a selection of weird and wonderful food pairings including pickled sultanas, bacon and maple syrup ice cream, and mango and carrot sorbet.

The aim of the session was to train the students to think for themselves about flavours and enhance their skills in order to create dishes that will work for customers.

Earlier in the day, the students were also cooking up a storm in the kitchen creating their own delicious soup and bread pairings.
